Vanilla planifolia, and is the most commonly used bean variety in vanilla extract. In the 1800’s the French exported the vanilla bean from Mexico to Réunion (Ile de Bourbon at the time), hence the name Bourbon Vanilla. Eventually, the beans moved to Madagascar. Like coffee, different regions provide different flavor compositions. The beans from Madagascar offer a soft, sweet, vanilla flavor that complements the cinnamon.
